Cauliflower Rice with Onions, Garlic and Brussel Sprouts!
There are so many options when it comes to “sides” and thought, how about cauliflower rice for tonight! Normally I buy a cauliflower and grate it myself but Costco was selling pre-made cauliflower rice so I decided to buy a bag and see if it’s worth it! And I can totally see how convenient this is for a night where you’re rushing home from work and the idea of grating a cauliflower just isn’t one! So I say, yay for pre-packaged cauliflower rice if it’ll make it easier and encourage you to make your own home-cooked meal!
As a Nutritional Practitioner one of the things I focus on is making sure we keep our meals varied, and my second most important thing is to add healthy fat to the meal. The rest kind of all comes together! Varying meals helps us avoid food intolerances so it’s a good practice to take on.
So here is my recipe for cauliflower rice with onions, garlic and Brussel sprouts. You can add any vegetables you like!
Ingredients for 4:
- 1 onion chopped into pieces or half rings
- 1/4 cup butter and at least 2 tablespoons coconut oil
- 7-8 cloves of garlic, minced (if you’re not crazy about garlic, 2-3 cloves will do)
- As many Brussel sprouts as you like
- Herbamare, or pink Himalayan salt to taste
- Pepper to taste
Directions:
- Melt butter and coconut oil over low heat in large frying pan
- Add onions and stir occasionally, at least 5 minutes
- Add garlic and stir, for about a minute
- Add Brussel sprouts
- Add a half bag of cauliflower rice or 340g or 3/4lb
- Add salt and pepper
- Cook until ready to serve, at least 20-25 minutes
Supper tonight: cauliflower rice, Indian lentil soup, steamed green beans and broccoli and filet mignon! Yum!
