Strawberry Chia Coconut Pudding

Who doesn’t love pudding!! I can’t think of anyone who doesn’t, right!?! I remember growing up, my grandmother used to make my sister and I pistachio pudding, and it was so creamy, just so delicious! And now, I want to share this love of pudding with my kids, without all the added preservatives and nasty ingredients. Here I’ve created a pudding using quality ingredients that your family will be able to indulge in guilt-free. If you don’t have strawberries, you can use other fruit; blueberries, raspberries, pineapples, mango, etc. Any fruit will work here!

Here’s the recipe:

Ingredients:

  • 2 cups fresh or frozen organic strawberries, sliced (you can use other berries)
  • 5-10 dates, pits removed (the dates add the sweetness, so the more dates the sweeter)
  • ½ cup filtered water
  • 1 can full fat coconut cream or milk (Cha’s only has organic coconut and water as ingredients)
  • 3 tablespoons whole chia seeds
  • 1 teaspoon alcohol-free vanilla

Directions:

  1. Cover dates with water in blender and allow to sit for a few minutes to absorb the water
  2. Add in coconut milk, chia seeds, vanilla, strawberries and blend
  3. Once blended pour into a 1-litre glass jar
  4. Cover, and chill overnight.
