CAULIFLOWER TABBOULEH
I love Mediterranean and Middle Eastern cuisine so much! Who doesn’t right? I mean, the ingredients, the spices, the textures, the lemon, it’s all so delicious! And since I like playing around with recipes and creating new dishes, this Cauliflower Tabbouleh was inspired by the traditional tomato-bulgur tabbouleh dish, but with a few twists. First, since I am grain-free, I replaced the bulgur wheat with hemp seeds by Manitoba Harvest. Hemp seeds are great and they’ll give you the same crunch bulgar wheat delivers. Hemp seeds are a complete protein, providing all nine essential amino acids, they provide omega-3 fatty acids, and are a good source of fiber, vitamins and minerals. My next different ingredient in this recipe is cauliflower. Cauliflower help protect against stomach, rectum, prostate, colon and bladder cancer. The indoles it contains stimulate’s the body’s detoxification system, they also lower circulating estrogen levels in the body therefore reducing breast and uterine cancers, women cancers. The benefits of cauliflower are endless which is why I wanted to create a Cauliflower Tabbouleh! Hope you’ll enjoy.
** This recipe will make a large batch, so it’s great for meal prepping for the week, or to bring as a salad at a picnic or party.
INGREDIENTS for a large batch – meal prep:
- 3/4 to 1 large cauliflower, washed and roughly chopped
- 2 bunches of parsley
- 1 large onion, roughly chopped
- 4 garlic cloves
- juice of 3 lemons
- 1 cup hemp seeds
- 1/2 cup olive oil
DIRECTIONS: Wash and remove stems off parsley. Add them to food processor and shred, then put them in a large bowl. Next add onion and garlic and chop roughly and add to food processor to shred. Add to parsley mixture. Next add cauliflower to food processor, you might have to work in batches, and then add shredded cauliflower to bowl. Add hemp seeds to parsley, cauliflower, onion, garlic mix as well as the lemon juice and olive oil. Add salt and pepper to taste and mix well. Once ready, taste and add salt if necessary.
** Feel free to modify the recipe, add more garlic, more lemon or more cauliflower or less if you’d like to. Make it your own.
