So I posted this picture on Facebook and Instagram asking my followers to guess what I was making and what was in it. I got some pretty good and funny answers. Some said, a salad, but that the powder was throwing them off and most said a soup. When I asked them to specify ingredients, I got things like eggs, garlic, okra, etc. Some were close and others not so much. But no one nailed it 100%, so here it is:
Quick Soup Recipe
- 2 cups of pre-cooked broccoli
- 2-3 cups of fresh arugula
- a few slices of jalapeno peppers (go with how spicy you like your soups)
- a 1-inch knob of ginger, grated
- 1 garlic bulb, cut in chunks
- 2-4 tbsps of Organika bone broth powder
- 1/2 cup of coconut milk
- 1/2 cup cilantro, washed and stems removed
- Salt and pepper to taste
- Enough filtered water to cover the vegetables
- Extra virgin olive oil to drizzle on top – optional
Directions:
In a pot, add all ingredients, bring to a boil and let simmer until arugula is wilted and garlic can be poked with a fork, about 5-10 minutes. Using a hand held mixer, blend the soup to desired consistency. Serve and enjoy with a drizzle of extra virgin olive oil. You can make this quickly with any left over vegetables you have available and any leafy greens and herbs. Mix it up, enjoy!
