My husband loves banana bread and my kids love muffins! So sometimes you have to meet half way and this banana chia muffin recipe is the perfect balance. As a bonus, it is also GAPS friendly which is great for my family.

GAPS Friendly Banana Chia Muffins

Makes 12 muffins

  • 5 tablespoons coconut oil (melted)
  • 2 1/2 cups almond flour
  • 1/2 cup chia seeds
  • 4 eggs
  • 1/2 cup raw honey
  • 2-3 large ripe bananas mashed (about 1 cup)
  • 1 teaspoon organic vanilla extract
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon sea salt

Preheat oven to 325°F. Line a muffin pan with 12 muffin liners. In large bowl, combine almond flour with chia seeds, baking soda, sea salt  and mix. Then add mashed banana, coconut oil, eggs, honey and lemon juice and mix into a smooth batter. Pour into muffin liners. Bake approximately 25 to 30 minutes depending on your oven. Once baked remove from oven and muffin pan, place on cooling rack and enjoy!

Enjoy these muffins hot with a knob of butter, delicious!
