I love apple season! Apple picking is a great family activity. There’s the fresh air, the sun and of course, the apples! There are so many desserts to make; apple pie, apple crisp and apple muffins! Since our family is on the GAPS Diet, we have to keep desserts to a minimum but we can still enjoy muffins! Today I’ll share a GAPS friendly apple cinnamon muffin recipe.

GAPS Friendly Apple Cinnamon Muffins

Makes 12 muffins

  • 5 tablespoons coconut oil (melted), can substitute with butter
  • 2 1/2 cups almond flour
  • 4 eggs
  • 1/2 cup raw honey
  • 1 to 2 tablespoon fresh lemon juice
  • 1 teaspoon organic vanilla extract
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 2 apples, peeled and cut into small pieces

Preheat oven to 325°F. Line a muffin pan with 12 muffin liners. In large bowl, combine almond flour with baking soda, sea salt, cinnamon and nutmeg and mix. Then add coconut oil, eggs, honey and lemon juice and mix into a smooth batter. Add in apples and mix. Pour into muffin liners. Bake approximately 25 to 30 minutes depending on your oven. Once baked remove from oven and muffin pan, place on cooling rack and enjoy!
