Being on the GAPS Diet means that processed foods are out of the question! Now what does one do when they crave a cracker? You make your own! I honestly haven’t had crackers in months and decided I’d have to create a recipe that is GAPS friendly and that my kids would love too. Well here it is, these crackers turned out great, and they’re delicious and healthy too. You can experiment with other spices if you prefer. Fennel would be delicious!

Ingredients:

2 cups almond flour

2 tablespoons coconut oil (melted)

1/4 cup chia seeds

2 garlic cloves pressed

1 egg

1 tsp salt (more or less depending on your preference)

1 1/2 tablespoon dried rosemary

1/2 tablespoon dried cumin

1/2 tablespoon garlic powder

Set the oven at 275°F. Place all the ingredients in a food processor and mix until well combined. In the meantime, line a cookie sheet with parchment paper. Once the ingredients are well mixed, place the batter on the cookie sheet and use a rolling pin to spread out batter. Spread to desired thickness. Bake for 20 minutes. Once done, remove from oven and using a knife cut into desired shapes immediately as they are still soft and will not break apart. Then let cool on cookie sheet.

Or you can let them cool on the cookie sheet and then break them apart using your hands for a more rustic look.
