Homemade Traditional Mayonnaise: Ingredients (Makes about 1 cup):
- 1/2 cup olive oil
- 1/2 cup avocado oil
- 1 tsp mustard
- 1 tsp lemon juice (optional)
- 2 pastured eggs
- 1/4 to 1/2 tsp salt
Directions: Take a 500ml glass jar. You’ll need a hand-held mixer or a nutri-bullet. Add all the ingredients into the jar and using the handheld mixer, pulse until thickened to mayo consistency. It won’t take long, maybe 30 seconds to 1 minute. Store in fridge for up to a week, in the mason jar with a lid covered.
Flavoured Mayonnaise:
Ingredients (Makes about 1 cup):

- 1/2 cup avocado oil

- 1 small garlic clove peeled and pressed
- 1 small handful of fresh herbs of choice: ie: cilantro, basil, rosemary, etc.
- 2 pastured eggs
- 1/4 to 1/2 tsp salt
- Optional: you can also add spices like 1/2 to 1 tsp chili powder, 1/2 tsp cumin and 1 tbsp lime juice if you wanted a Tex-Mex mayo, or 1 tsp curry powder if you wanted an Indian type mayo, etc.

Add all the ingredients into the jar and pulse the mixture using the handheld mixer until thickened to mayo consistency. It won’t take long, maybe 30 seconds to 1 minute. Store in fridge for up to a week, in the mason jar with a lid covered.
